Here at The Insider UAE HQ if there is one thing we (marginally) love more than afternoon tea, it’s ice cream but now thanks to Fortnum & Mason Dubai we can indulge in both at the same time for a true guilty-not-so-guilty pleasure.
The all-new Afternoon Tea Sundae is a unique twist on the iconic Knickerbocker Glory consisting of tea-inspired ice-creams. It’s so ingenious, you almost wonder why they haven’t done it before?
The Afternoon Tea Sundae perfectly mimics the perfect blend of sweet and savoury that we have come to know and love with traditional afternoon teas – Rose Ripple, Cucumber and Mint, Strawberry and Scones and Coronation – unique flavours of ice-cream that make up this perfect pastel all-day desert.
A drizzle of Afternoon Blend Tea Syrup is added to the bottom of a classic sundae glass, followed by cucumber ribbons and the Cucumber & Mint sorbet – made with fresh cucumber juice infused with mint to reflect the taste of the traditional delicate cucumber sandwiches.
Next, as scones are traditionally the middle course between sandwiches and patisserie, the Strawberry and Scones ice cream is served with a strawberry ripple flavour packed with generous chunks of Fortnum’s own handmade scones, complete with slices of fresh strawberries, before a surprise sprinkling of popping candy is added.
Finally, Rose Ripple ice cream is then scooped on top, to represent the patisserie tier of a Fortnum’s Afternoon Tea. The sundae is then topped with Italian meringue, glazed by blow torch, and decorated with half a rose éclair and half a scone with jam and clotted cream.
The Coronation flavour – easily the most experimental and surprising of all the ice creams is served (perhaps wisely) in a mini cone on the accompanying saucer. Produced with mayonnaise, spicy paprika, curry powder and mustard, all offset by a sweet citrus zing of lemon and lime juices and mango puree. It’s one to add to the ice-cream bucket list that’s for sure, it’s surprise heat contrasting nicely to the sweetness of the other flavours.
