The “center cut” of meat refers to steaks and other cuts that only come from the middle portion of the muscle. By inference this smart sophisticated steak house at the Ritz-Carlton DIFC is saying it’s a cut above the rest. We visited to find out.
Certainly the décor is classy but not over the top and very much in keeping with the rest of the hotel and its communal areas.
This is a hotel that prides itself on its minimalist elegance. The menu itself doesn’t pertain to thousands upon thousands of different dishes, simply a select group of beef cuts that it does brilliantly; who’s to argue with a quality over quantity approach.
When it comes to ordering, the head chef explains the different cuts at your table before guiding you towards your selection. This is the point that if you don’t want to order steak, you very embarrassingly realise you are in the wrong restaurant.
There are few steaks more flavoursome than the dry-aged tenderloin. The carefully controlled maturing process means it has an intensive flavour that’s locked into the meat and gives it its deep red colour. Although we had the steak medium to our preference, you didn’t lose any of the juiciness or flavour and the meat was cooked to perfection, something that few restaurants manage to perfect.
So often in steak restaurants the side dishes never quite live up to the flavours of the meat but not here. Center Cut has a different take on every potato dish, the truffle hand-cut fries with parmesan and the sweet potato versions were sublime and we thoroughly recommend. In fact, we ordered two portions of the sweet potato fries as they were ‘that’ good. Combine this with some tasty asparagus or their signature green, creamed spinach and your favourite steak now has its perfect partner.
Center Cut piece-de-resistance is their homemade barbecue sauce which has to be tried, as sticky as it is sweet, we challenge you to find a better steak sauce anywhere in Dubai. The chef in fact, went to the trouble of preparing us four different sauces from peppercorn to béarnaise, so we were able to try each one and whilst they were all excellent there was only one clear winner.
There are very few steak houses that truly feel like fine dining and Center Cut is one of them. Having not visited the restaurant for some time we were interested to see if their standards were still as high and we were not disappointed. Center Cut is not a restaurant that needs to shout about it’s excellence or boast monthly promotions, its reputation among those Dubai foodies in the know and the well-healed guests of the hotel alike, more than suffices. Stylish surroundings, top quality food at very reasonable prices makes Center Cut the undisputed King of the Dubai steak house.
